Enzyme Function | FUNCTION: Sinapine esterase that catalyzes that hydrolysis of sinapine, releasing choline and sinapate. Sinapine (O-sinapoylcholine) is the predominant phenolic compound in a complex group of sinapate esters in seeds of oilseed rape (B.napus). Sinapine has antinutritive activity and prevents the use of seed protein for food and feed. Shows broad substrate specificity towards various other choline esters, including phosphatidylcholine. {ECO:0000269|PubMed:18036206, ECO:0000269|PubMed:21248075}. |
